Okay, well this is my specialty. This strategy will work on almost anyone except another, better Hittite player, or a good Cho player (You can add your own little gloss to it to make it better of course). Of course this whole strategy is assuming that you start in the iron age, and aren't some cave-age-DM-playing munkus. But back to the subject at hand ... Alright, well you want to start off by building 8 TC's (5 or more will do, but I recommend 8). And once you've built one or two TC's build cv's at each. When they're done, assign them a group number and send them to build houses somewhere (helps if you place them between your territory and an ally's land). So now, after you're done building a bunch of houses, all eight TC's should be done. Build two cv's at each. So now you should have 19 cv's; assign them a group number, then have them build 2 or 3 Gov't. Centers and markets, one storage pit, and one granary. Don't waste time building the SP & granary near their respective resources; you just want them for their research right now. So at the gov't centers, research ballistics (more siege accuracy, enables ballista towers), alchemy (flaming arrows/ballista bolts/cat rocks), and engineering (farther siege range), and at the markets, research craftsmanship (farther missile weapon range), siegecraft (can upgrade to Hvy Catapult), and coinage (free tribute; more goldmine productivity)... If you're planning on using ele's or cents, research irrigation and just before you start your initial attack, build 8 or more farms, in SAFE territory, maybe behind some towers. Of course, at the granary, research Guard Towers (then ballista after you get ballistics, and at the storage pit, research the chain mail for archers (can upgrade to HHA). Now you must decide which units you wish to use the most of. If you're playing against someone whose civilization has weak siege weapons (Egyptian/Yamato/Phoenician) you should probably go with HHA's and Centies. If you're playing someone with building bonuses (such as stronger towers, etc.), or possibly a strong navy, build Catapults (actually you should build cats no matter what). If you're playing vs. Persia or Greece, go with the former. If you're playing against Choson, neither individual strat will work but I would recommend the former, with some cats tossed in to kill towers (in case you don't know, former = choice #1 and latter = choice #2).
My usual strategy is Cats with HHA's behind 'em to kill infantry. If I'm fighting a Cho, I like to throw some ele's or cents in between the cats and cents, so if a wall of legions comes up to my cats, my cats can run to the side, and the cents just magnetize to the legions and kill 'em, all the while keeping the legions from killing the HHA's driving flaming arrows into their backs. Just keep a very close eye on your cats. Make sure they don't try to fire at the legions 'cuz they'll probably kill more of your cents and HHA's than the legions will.
If you chose to go with HHA's and Centies, first build archery ranges. Build these as opposed to academies, since HHA's can respond to attacks much faster than Centurions, thereby making themselves the preferable early defensive units. As soon as you've got one archery range built, upgrade to HHA's. While you're building your archery ranges, be building two more batches of cv's (a batch = 8; one for each tc). Have them build the other building you selected; in this case, academies. As soon as you have an academy built, upgrade to Phalanx. Now go back to your gov't center and research aristocracy (can upgrade to Centurion). Also, research irrigation at the market, so that if you run out of food (which you probably will, using centurions and archers) you will have maximum food-producing capability from your farms. Note: This is a poor tactic against a civ with good siege and archers (like another Hittite).
On the other hand, if you decided to go with HHA's and Hvy. Cats, here's what you do. First build a bunch of Siege Wkshp's (about 15-20), and as soon as you have one built, upgrade to catapult. Of course, while you're building the Siege Wkshp's, be making 16 more cv's. Once they're all done, send them to go build your archery ranges (20 or more). And like before, once one is built, upgrade to HHA there (to do this you must research the archer chain mail at the Storage Pit). Now build a ton of catapults - about 1.5 to 2 batches. Now do the same at your Archery Range. If you're playing against a Choson, you may want to build several academies and upgrade to Centurions (prerequisite is Aristocracy at the Gov't Center) and place them in front of your HHA's while they're popping Legions. A Centurion can take on 1.5 Choson Legions if not being ganged-up on. An HHA can take out a Choson Legion with little over 5 shots. Well whether or not you decide to use Centies, this is pretty much the end of the strategies. Hittite Catapults have double the hit points of the Catapults of other civs, so use them well. I recommend building the "prescribed dosage" mentioned above (15-20). And then have your HHA's (all 20+ of them) be a few tiles behind your cats to pick off any Centies/Cavalry that come to kill your cats. From here, just follow the general strategy of kicking someone's ass (towers first, etc.) and you should be just fine.
Note: This is a very old strategy but it's really good to build on.
