I'll start off by saying that Greek is one of the best DM civ's in AoE. They can really kick some ass, and are a great civ to use unless another good player in the game is using a strong siege civ. The Greeks can brutally devastate the Choson, which is why I like them so damn much. With their Helepolises and fast Centurions, they can just demolish hordes of Legions. Unfortunately (or fortunately, for me), a Hittite can completely demolish a Greek. Greek used to be my one-and-only civ, but now I'm mainly Hittite, but anyway....
We'll start with when to use the Greeks and when not to. You can use Greeks against nearly every civ in the game and do a good job. When you're going against 2 or more Choson players, it is beneficial to have one of your teammates be Persian, Greek, or Minoan, or if they're a super-Hitt they'll own all. If you are going against Hittites or Sumerians, watch out, because they can slaughter Greece. Now, on to the main strategy....
First off, build 7 more town centers, and build a new villager at your current TC. Send the new villie to go build houses, and after your tc's are built, send your cv's to build about 30 academies somewhere. All this time, you should be making new batches of cv's, until you have 22 of them (that's 2 full batches of 8 and then 6 more). Send them to go build the rest of the academies (all the while building 3 more batches of civilians) if they're not already finished, then send them to build a storage pit and start chopping. When all three batches of cv's are done, assign them a group number and send them to build about 15 siege workshops. After that's done send them to mine gold. Now, first you needa research aristocracy at the Gov't Cent. (so you can upgrade to Centurion). Then you have to.... well.... upgrade to Centurion. And basically you want to pump out anywhere between 50 and 100 centies, and just swarm your enemies as soon as possible. Just make sure you don't wander into Hittite territory or you'll get slaughtered by archers and cats. Just look for the Cho or whatever other civs there are... any civs besides Hitt, Sumer, and Greek. The reason I mention Greek there is because there might be someone using the hele strategy listed below, in which case your cents will get clobbered. If you do stumble into Greek territory just make sure you have some Hittite or Sumerian backup, as your army can vanish in just about a minute going up against a force of like 25 hele's and several towers.
Alternatively to the Centurions you can just go all-out hele's, which kicks a lot of ass, but just remember if you're going up against Hitt, Sumerian, Minoan, another Greek, or even a Persian, Assyrian, or Babylonian - basically any civ that can upgrade past stone throwers - just watch out 'cuz just like 6 regular cats can flatten the majority of your hele army before you even notice if you're not paying VERY close attention to your attack. That means don't go rebuild your farms or start building another wave of hele's or something until you secure the area!
I also recommend using cavs at the very start of the game to harass a Hittite's fledgling siege, before they have a chance to pump out Ele's HHA's or Cents. Just keep in mind that to keep the Greeks going you'll need at least 60 vills, working on mostly wood and gold (unless you know the game's going to be easy). I'd recommend around 72:
w o o d : : 36 (+/- 5) [move some to food and gold if you're not using hele's much]
g o l d : : 20 (+/- 5) [2 mines, remember to take mines offensively]
f o o d : : 12 (+/- 10) [allocate more depending on how many centurions you're using]
s t o n e : : 4 (+ 10) [not necessary at all really; leave your mines for a Cho ally]
