Parsley has many associations: mirth, joy, festivity, honor. The Greeks crowned heroes with it and used it to make wreaths for tombs. Because it was held sacred to oblivion and to the dead, parsley wasn't used in cooking. The Romans associated it with festivities. It was worn at banquets to prevent drunkeness and was eaten to assist digestion and remove the odor of garlic and onions.
External applications of parley leaves have been used to dispel tumors suspected of being cancerous. A poultice of the leaves is said to be an efficacious remedy for the bites and stings of poisonous insects. Parsley has also been used as a treatment for epilepsy and for kidney stones. Earache has been treated by dropping parsley juice with a little wine into the ears.
Don't use parsley only as a garnish. Chop fresh leaves and use them generously as a flavoring for sauces, soups, stuffings, rissoles; and sprinkle over vegetables or salads. Make a good bouquet garni of parsley, tarragon, and chives.
