4 bottles Bubble-Up (28 ounce size)
1 small can frozen lemon or lime juice (undiluted)
1/2 gallon lime sherbert
Mix together well. Ice mold is made from lemonade, lemon slices, and maraschino cherries. Use both red & green cherries to add color.
Reduced Fat Chocolate Chip Cookies
2 1/4 cups all -purpose flour
1 tsp. baking soda
1/2 tsp. salt
3/4 cup packed light brown sugar
1/2 cup granulated sugar
1/2 cup butter or margarine (room temp.)
1/4 cup fruit-based fat replacement (Lighter Bake)
1 egg
1 egg white
1 tsp. vanilla extract
2 cups reduced-fat semisweet chocolate chips
Preheat oven at 375 degrees. In bowl combine flour, baking soda, salt; set aside. In another bowl with mixer at medium speed beat brown sugar and granulated sugar, butter, and fat replacement until light and fluffy, 2-3 minutes. Beat egg, egg white and vanilla extract until combined. Reduce mixer speed to low; beat in reserved flour mixture until combined. Stir in chocolate chips. drop by heaping tablespoons 2" apart onto ungreased baking sheets. Bake 10-11 minutes or until cookies are lightly browned. Cool on pans on rack 5 minutes.
Remove from pans; cool completely on rack.
Makes 48 cookies. Only 2 grams of fat each cookie.
Time in kitchen about 20 minutes. Ready to serve in about 55 minutes.
Spring Salad
1 pkg. (10 oz.) frozen raspberries in syrup, thawed, drained, and divided, 1/4 cup syrup reserved
1/4 cup oil, preferably olive
3 Tbs. white wine vinegar
1 clove garlic, minced
1 tsp.salt
1/2 tsp. pepper
12 cups loosely packed mixed baby salad greens, about 8 oz. each
4 oz. brie cheese, cut in 3/4" cubes
In blender or food processor combine 2 Tbs. raspberries, reserved respberry syrup, oil, vinegar, garlic, salt, and pepper; process until slightly thickened, about 1 minute. In serving bowl combine salad greens, brie, and remaining raspberries.
Just before serving toss dressing.
Makes 6 servings. Time in kitchen about 15 minutes.
Mississippi Mud Cake
Icing recipe will follow.
2 cups sugar
1 cup soft margarine
4 eggs
1 1/2 cups plain flour
1/3 cup cocoa
2 teaspoons vanilla
1/4 teaspoon salt
1 cup chopped nuts
1 bag small marshmallows
Mix sugar, margarine, and eggs; then blend in other ingredients except marshmallows. grease and flour oblong pan and cook 30 minutes on 300 degrees. Remove and spread marshmallows on top. Return to oven for 10 minutes or until marshmallows melt.
ICING:
1 stick margarine
1/3 cocoa
1 box confectioners sugar
1/2 cup evaporated milk
1 teaspoon vanilla
dash of salt
1 cup chopped nuts
Mix and spread on cake when cool.
Sweet & Sour Chicken
1 bottle Russian Dressing
1 small jar apricot preserves
1 package onion soup mix
chicken breasts or cut up pieces
Mix first three ingredients. Put chicken in baking dish. Cover with mixture then with foil. Bake at 325 degrees for 2 hours. Serve with rice.
Sweet & Sour Slaw
1 large cabbage
1 cup sugar
1/4 cup vinegar
1 cup salad dressing or mayonnaise
salt to taste
Grade cabbage, mix other ingredients and add to cabbage. This will keep several days in your refrigerator.
Pie Crust for Fried Pies
1/2 cup shortening
1 small can pet milk
2 Tbsp. sugar
1 egg
1/4 tsp. salt
Mix ingredients together and then add enough plain flour to make very stiff dough.
Ingredients for Filling Pies
1 qt. of apples or peaches
2 cups sugar
Mix together and cook over low heat until thick. Cool before making pies. Use oil to fry instead of shortening.

Pizza Bread
1 1/2 lbs. ground beef
1 tsp. salt & pepper to taste
1 tsp. fennel seed
Brown these ingredients well and pour off half in greased 9X13" pan. Spread beef on top of first batter. Then 1 large jar pizza sauce with a little water and pour over meat. Top with sliced mozarella cheese to cover sauce. Spread remaining batter over all and sprinkle with 1 tsp. oregano and parmesan cheese. Bake at 375 degrees for 20 minutes or until brown. Let set 5 minutes before slicing.
