EQUIVALENT MEASURES
If you don't have one of the ingredients for a recipe, in the list below there may be another ingredient that can be substituted in its place and work as well as the ingredient called for in the recipe.
....1 cup butter = 7/8 cup lard or 7/8 cup cooking oil
....3/4 cup cracker crumbs = 1 cup bread crumbs
....1 cup self-rising flour = 1 cup all-purpose flour plus 1 tsp. baking powder & 1/2 tsp. salt
....1 cup cake flour = 1 cup sifted all-purpose flour minus 2 tsp.
....1 teaspoon baking powder = 1/2 tsp. cream of tarter plus 1/4 tsp. soda
....1 Tablespoon cornstarch or 2 Tablespoons all-purpose flour = Arrowroot (the substitutions will not make the sauce as clear as arrowroot does)
....1 Tablespoon tapioca = 1 1/2 Tablespoons all-purpose flour
....2 large eggs = 3 small eggs
....1 cup commercial sour cream = 1 Tablespoons lemon juice plus evaporated milk to equal 1 cup or 3 tablespoons butter plus 7/8 cup sour milk
....1 cup fresh milk = 1/2 cup evaporated milk plus 1/2 cup or 3-5 Tablespoons nonfat dry milk in 1 cup water
....1 cup honey = 1 1/4 cups sugar and 1/4 cup liquid
....To substitute honey for sugar in baking goods, such as muffins, breads, rolls and scones, add 1/2 teaspoon baking soda to dry ingredients.
....1 cup Molases = 3/4 to 1 cup sugar
....1 square(1oz.) unsweetened chocolate = 3 Tablespoons cocoa plus 1 Tablespoon butter or oleo or 3 Tablespoons carob plus 1 Tablespoon water
....1 Tablespoon Carob = 1 Tablespoon cocoa
....1 clove fresh garlic = 1 teaspoon garlic salt or 1/8 teaspoon garlic powder
....1 teaspoon onion powder = 1 tsp minced onion
....1 Tablespoon Fresh Herbs = 1 teaspoon dried herbs or 1/4 teaspoon powdered herbs
....1/4 cup chopped parsley fresh = 1 Tablespoon dehydrated parsley
....1 teaspoon dry mustard = 1 Tablespoon prepared mustard
....1 pound fresh mushrooms = 1-6oz. canned mushrooms
