Beer Bread
3 cup bread flour or self-rising flour 2 Tablespoons sugar 1 can beer
Mix all the above ingredients together. Pour into a loaf pan. Bake at 375 degrees for 40-45 minutes. Take out of oven and brush with butter and then put back into the oven for 2-3 minutes longer to brown.

Corn Bread
1 cup all-purpose flour 3/4 cup cornmeal 1 Tablespoon sugar 1 Tablespoon baking powder 1/2 teaspoon salt 2 egg whites 1 cup skim milk 1 Tablespoon cooking oil Nonstick spray coating
In a medium mixing bowl stir together flour, cornmeal, sugar, baking powder, and salt.
In a small mixing bowl beat egg white, milk, and oil (for a bit of hot stir one 4-ounce can chopped green chili peppers, drained, into milk mixture). Stir just until mixed.
Spray a 9x9x2-inch baking pan with nonstick spray coating. Pour batter into pan. Bake at 400 degrees for 20 to 25 minutes or till a toothpick inserted comes out clean. Makes 12 servings at 91 cal., 2g fat each.

Honey Raisin Bread
1-1/2 cups flour 2-1/2 teaspoons baking powder 1/2 teaspoon salt 1 cup Post Grape-Nuts Flakes 1 cup 2% or skim milk 2/3 cup firmly packed brown sugar(I like to use 1-1/2 cups) 1 egg, slightly beaten 1/4 cup honey 2 Tablespoons margarine, melted 1 cup raisins(I use the Sunmaid light California Raisins) Or you can use 1 cup dried apricots, finely chopped.
Heat oven to 350 degrees.
Mix flour, baking powder and salt in a large bowl. Mix cereal and milk in another bowl; let stand 5 minutes. Stir in sugar, egg, honey and margarine. Add this mixture to the flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in raisins. Pour into 9 x 5-inch loaf pan which has been sprayed with no stick cooking spray. Bake 55 to 60 minutes or until toothpick or knife inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely on a wire rack.
Makes 16 (1/2-inch) slices. Note: For easier slicing, wrap bread and store overnight. I like to wrap individual slices and freeze. Great for breakfast.
