Pulled Pork Sandwiches



1 boneless pork loin roast(about 4 pounds), trimmed if necessary
1 to 2 Tablespoons Caribbean jerk seasoning
1 can (14 1/2 ounces) beef broth
Sweet and Sassy Red Sauce(recipe follows) French bread or buns, I use the homemade buns made from my rolled dough listed in the bread section of my recipes.

Remove strings from roast.
Sprinkle the Caribbean jerk seasoning onto large sheet of waxed paper.
Roll both halves of pork roast in seasoning to coat all surfaces.
Place side by side in a 9x12-inch baking dish.
Pour the broth around roast.
Cover tightly with foil and cook in a 325 degree oven for 2 1/2 to 3 hours or until very tender when pierced with a fork.
When very tender, using two forks, pull pork into shreds.
Serve on buns with sauce, or put the shredded pork in the sauce and simmer for a few minutes.


Sweet and Sassy Red Sauce:

1/2 cup original-flavor barbecue sauce or your favorite sauce
1/2 cup steak sauce
1/2 cup chopped onion

In small saucepan, combine barbecue sauce, steak sauce, and onion.
Bring to a boil over medium heat. Reduce heat and simmer for 15 minutes.

Serve warm or at room temperature. Makes 1 cup sauce. If you are going to add the pork to the sauce, you will need to double the recipe.



Hummus Spread Sandwich

1/4 cup garlic oil
3 Tablespoons fresh lemon juice
1/4 cup + 1 Tablespoon water
1 1/2 teaspoons ground cumin
1 teaspoon ground black pepper
two 16 to 20-ounce cans chickpeas or garbanzo beans, drained

Put all the ingredients, except one can of the chickpeas, into a blender or food processor.
Blend until smooth.
Add the remaining chickpeas and blend, adding an additional Tablespoon of water or garlic oil if the mixture is to thick to blend.
Refrigerate until ready to use.
Yield: 3 to 3 1/2 cups.

Serve on your favorite homemade bread or any bread you like.

Spread the hummus onto a slice of bread. Top with lettuce, alfalfa sprouts, sliced tomato,optional: sliced olives, chopped onion, shredded cheese etc., etc. Top with your favorite toppings on a sandwich.
