BEEF BRISKET IN BEER
1 (3 ½ -4 pound) beef brisket ½ tsp salt ¼ tsp pepper 1 onion, thinly sliced 2 tblsp brown sugar 1 (12 oz) can beer ½ cup chili sauce 2 tblsp all purpose flour ½ cup water Salt and pepper to taste
Trim excess fat from brisket and place in a lightly greased 13 x 9 x 2 inch-baking dish. Sprinkle with salt and pepper; top with onion slices. Combine brown sugar, beer and chili sauce; pour over meat. Cover with foil and bake at 350° for 2 hours. Remove foil and bake an additional 30 minutes or until tender. Remove meat to a serving platter; keep warm. Skim and discard fat from pan juices; reserve 1 cup of juices. Combine flour and water; slowly stir into reserved pan juices in a saucepan. Cook over medium heat, stirring constantly, until gravy is thickened. Add salt and pepper and serve with brisket. |
