There are a variety of reasons why a person would become a vegetarian or a vegan. They range from health reasons to spiritual reasons. For myself, it was originally for health reasons, but has gone far beyond that. Animals are not as dumb as many people want to believe, and I see no reason to needlessly hurt them when we can survive very well without harming them.
An excellent book on vegetarianism and veganism is "Becoming Vegetarian," which was written by three registered dietitions (Vesanto Melina, Brenda Davis, and Victoria Harrison). There are a variety of books out there on the subject, and there are also numerous websites on it too.
