RKon's Beef in Wine
(Or, what the heck, Beef in Beer!)
 


 
This is an attempt to provide recipes for a complete easy and quick meal... as long as you don't count cooking time in the quickness. No dessert here, check out recipes from ecco or Dany^ for a dessert. Serve this with rice and a green salad. I am sure you know how to do these quickly. And, oh yeah.. Open any decent dry red wine, use it for the recipe and then finish it with the meal! :þ~
 
 
Beef in Wine
Baked Sweet Potatoes
Spicy Corn & Bean Scramble

Beef in Wine
 
 
1 kg
stewing beef
2 lbs

cloves of garlic
2
3 tbsps
olive oil
3 tbsps
1 env
onion soup mix
1 env
1 dl
dry red wine*
½ cup
1 dl
beef broth
½ can
1 tsp
soy sauce
1 tsp
?
fresh ground pepper
?
2 tbsps
ketchup, preferably hot
2 tbsps
1 tsp
dried thyme
1 tsp
1 can
5 dl
whole mushrooms with juice
or
fresh sliced mushrooms
1 can
1 pint

The wine should be a great Bordeaux - but, trust me, any decent dry red wine will do. Substitute beer for the wine. However,  just add 1 tsp of brown sugar with beer.
 
Add garlic cloves to oil in a frying pan. Stir. Add beef cubes and brown for a few minutes. Remove from heat. 
Pre-heat oven to 300°F (150°C). 
Place beef, and all other ingredients, except mushrooms, in a covered oven casserole. Cook for 1½ to 2 hours. Add mushrooms, reduce heat slightly, and return casserole to oven for another 20 to 30 minutes.
 
 
 
Spicy Corn & Bean Scramble*

diced tomatoes

yellow corn kernels
1 can
1 can
kidney beans
1 can

cloves of garlic

large yellow onion, chopped
1
2 tbsps
olive oil
2 tbsps
2 tsps
chili powder
2 tsps
60 ml
hot salsa
¼ cup

If you think up a fancy word for this 'scramble', let me know!  :)
 
Stir garlic and onion in olive oil in a saucepan. Dump in remaining ingredients and bring to a boil. Reduce heat and simmer for about 15 minutes. Serve as a topping for baked or mashed sweet potatoes, or by itself as a vegetable. It is also good in a bowl for lunch, with some French bread and lots of butter. :)
