Pre-heat oven to 350° (175° C). Brown trimmed pork chops in a small amount of oil. Mix peach or apricot preserves with mustard-mayonnaise. Pour juice from fruit in a measuring cup and add water to make 2/3 cup (1.6 dl). Prepare commercial stuffing on top of stove using the juice and water. Mix sliced fruit in the stuffing and layer on the bottom of a 11 x 9 (28 x 23 cm) pan. Add browned pork chops and cover with the jam and mustard & mayonnaise mixture. Bake uncovered for 40-45 minutes, or until done. Serve with rice, topped with syrup. |
