This book is more than a mere recipe book. It is a ground-up,step-by-step philosophy of bread baking. With this book, you not learn the hows and whys of bread baking (with clear instructions and diagrams to help), as well as how to make bread-related baked goods (muffins, cookies and such). This is perhaps the best cookbook I have ever known -- my copy is battered, blotted and worn -- but I wouldn't give it up for anything!
