Canned tuna is one of my favorites. But I admit that it gets tiring after having it repeatedly in a series of climbs. But we have come up with a modified tuna recipe during our recent climb in Mt. Apo. And this is called TUNA SKILLET.
INGREDIENTS: 1 small can of green peas, 1 small carrot, 1-3 tbsp. margarine or cooking oil, 1 tsp. soy sauce, ˝ onion (diced), 1tsp. cornstarch, and 1 can tuna (drained).
Sauté onions with oil/margarine. Add peas and carrots; add water as necessary. Boil, then cover and simmer for 10 mins. Combine soy sauce and cornstarch and add to vegetables. Cook and stir until thick and bubbly. Gently stir in tuna and heat through. Serve with rice. Serves 4.
