Is ground from unripe berries of a tree that grows primarily in Jamaica. It has the strong odor of nutmeg, cinnamon, and cloves, which is why it is sometimes mistaken for a mixture of these different spices, hence its name. Allspice is used to season sausages, sauces, stuffings, cakes and fresh fruit desserts. Called the Caribean cure, allspice is thought to aid digestion and relieve flatulence and colic.

Comes from a ripe fruit in various shades of red and yellow, divided into mild and hot varieties. It piquant flavor is used for chili con carne, curries, soups and stews. Cayenne pepper contains a natural stimulant called capsaicin, which promotes blood circulation, improves digestion and lowers sensitivity to pain, useful in the treatment of arthritis and other chronically painful conditions

Dried or ground seeds from the crimson flowers of an evergreen tree, were once in as much demand as pepper. Used to season meat and baked goods, it is essential in apple desserts, gingerbread and pumpkin pie. It also enhances the flavor of baked beans and chili, barbecue and tomato sauces. Clove oil has long been used to ease toothache because its active ingredient is eugenol, which has a numbing, analgesic effect
Is obtained from the bark of cinnamon trees, usually after they have reached seven years of age. Its sweet aroma and spicy flavor makes it a popular ingredient for a variety of cookies, pastries and cakes. It is good for alleviating nausea, vomiting, diarrhea, indigestion and wheezing from asthma
Is the seed of the evergreen nutmeg tree. The dried brown see, after the shell is broken and discarded, is ground into the nutmeg we use. It is a mild baking spice for flavoring cakes and custards and dishes with a base of potatoes, eggs and cheese. It also adds punch to cocktails and eggnog. Nutmeg helps diarrhea, indigestion, loss of appetite and even insomnia.
Comes from the root of a member of the ginger family and is the major ingredient of curry powder, also used in prepared mustard. More bitter than saffron spice, turmeric can nonetheless be used in its place for color and flavor. It is used extensively in Indian cuisine, particularly in dishes with lentils and meat. Turmeric is said to be a tonic for the liver, calms inflammation, and relieves digestive problems. It contains curcumin, which has a mechanism similar to the one involved in the pain relieving action of aspirin, only milder.
