1/2 cup butter or margarine
6 tablespoons firmly packed brown sugar
6 tablespoons granulated sugar
3/4 teaspoon vanilla
1 egg
3/4 cup sifted all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup Oats (uncooked)
1 6 oz. pkg. (1 cup) semi-sweet chocolate pieces OR
1 6 oz. pkg. (1 cup) butterscotch pieces
Preparations: Set out the egg and butter/margarine about 1/2 hour before you begin so they'll reach room temperature. Preheat the oven to 375 degrees. Lightly grease 1 or 2 cookie sheets.
In a large bowl, beat butter, sugars and vanilla together until creamy. Beat in the egg. In a separate bowl, sift together flour, baking soda, and salt; add to the creamed mixture and mix well. Stir the oats and your choice of flavored pieces into the mixture. Drop by rounded teaspoonfuls onto cookie sheets and bake for 8 to 10 minutes. Let cool for a minute or so before removing from sheet with a spatula, so the cookies won't crumble. Makes about 3 dozen cookies.
