Green pea casserole with curry

 

 

 

Here is one of my experiments when making a caserole. I call it an experiment because every casserole I make becomes an experiment. I always add things I hadn't thought of when I started, so it use to be very different each time I make this.

  • 1 onion
  • 2 cloves of garlic
  • 1 red paprika
  • 1 - 2 tablespoons olive oil
  • 1 can of crushed tomatoes
  • 7 oz green peas
  • 1/2 pound soybeans
  • lots of curry
  • salt
  • black or white pepper
1. Chop the onion and crush the garlic. Heat the oil in a large pan, and put in the onion and garlic.
2. Chop the paprika and add when the onion becomes transparent. Add peas and beans.
3. Add the crushed tomatoes and curry. Add salt and pepper.
4. Let it cook for a while until it seems "done".

Serve hot over rice or couscous.
