North Carolina: Piedmont XVII 1/3 c Honey 2 ea Bay leaf 1/3 c Molasses 3 tb Tomato paste 1 ea Head of garlic, minced 48 oz Tomato sauce 2 tb Whole cumin seed 4 c White vinegar 3 tb Coriander seed 4 c Water 1 tb Peppercorns 1/4 c Salt 8 ea Dried chilis Cook honey-chilis 30 minutes. Add tomato sauce, cook an additional 15 minutes. Add rest of ingredients, simmer 10 minutes. |
