Ok here's the scoop on the GS500E, my brother has bought one.
I have ridden it on quite a few ocasions, and in deed it is a sweet bike. My brother's is an 89 gs500E with Metzlers 140 Rear and 120 up front. The handling is superb. It also has Progressive
springs, and a tinted fairing. This bike is a gas saver 400km-500km on tank. It's got very smooth operation of everything, except for a slightly sensitive throttle, which needs a steady hand to ride smoothly. The only major problem is that even with progressive springs, and a fairing it still gets a wheel shimmy after 150km/h, pregressing to wheel wobble as the speeds climb. On a full tank and with your chest weight on the tank i've managed 180km and it was still pulling. However this is very dangerous on this bike, it you hit a slight bump where it lifts the weight off the front wheel it will get into a severe wheel wobble at speeds higher than 150km/h (Trust me on this!!). A Steering dampner might help, but I don't see a place to mount it to, maybe with some modifications.
Anyway if you are not a speed deamon, this bike is wicked, and not bad on the highway up to 145km/h.
Here are a few pictures I found of the gs500e.
