Mustard Glazed Ribs
Ingredients: 2 1/2 lbs. meaty pork back ribs or spareribs 1 tsp. paprika 1/2 tsp. ground turmeric 1/4 cup chopped onion 1/4 cup vinegar 1/4 cup prepared mustard 1/2 tsp. celery seed 1/4 tsp. garlic powder |
Cut ribs into single rib portions. In a bowl combine 2 tbsp. brown sugar, paprika, turmeric, and 1/2 tsp. salt. Rub mix over ribs. Roast ribs, meaty side up, in a shallow roasting pan in 350 for 1 hour. For sauce, in a saucepan combine the remaining brown sugar, onion, vinegar, mustard, celery seed, and garlic powder. Bring to boiling, stirring till sugar dissolves. Drain fat from pan. Brush ribs with sauce. Roast 30-45 min. more till done. Brushing frequently with sauce. Makes 6 servings. |
Sweet & Sour Franks
Ingredients: 1/2 cup maple flavored syrup 1/2 cup orange or pineapple juice 3 tbsp. vinegar 2 tbsp. cornstarch 2 tsp. worcestershire sauce 1 tsp. dry mustard 1 16oz. pkg. (8-10) franks, bias sliced into 1 in. pieces or 1 lb. cocktail weiners 2 cups small frozen whole onions |
In a saucepan combine syrup, juice, vinegar, cornstarch, worcestershire sauce, and mustard. Cook and stir till thick and bubbly. Stir in franks and onions. Cook, stirring occasionally, 8 min. or till onions are tender. Serves 16 |
BBQ Wings
Ingredients: 1 1/2 lbs. chicken wings (about 8) 1/2 cup catsup 1/4 cup finely chopped onion 1 tbsp. honey 1 tbsp. vinegar 1 clove garlic, minced |
Rinse chicken, pat dry. Cut off and discard wing tips. Cut each wing at joint to make 2 sections. Place the wing pieces in a single layer in a 13x9x2 in. baking pan. Bake 375 oven for 20 min. Drain fat from pan.
For sauce, combine remaining ingredients. Brush wings with sauce. Bake 10 min. Turn over, brush again with sauce, and bake 5-10 min., or till chicken is tender. Microwave directions: Prepare the chicken wings as above. Place wing pieces in a single layer in 12x71/2x2 in. pan. Cover with waxed paper. Cook on high at 100% power for 5 min. Drain. Brush wings with sauce. Turn wings over and rearrange. Brush with sauce. Cook, covered on high for 3-5 min. more or until chicken is no longer pink |
