Egg Nog

      Ingredients:
      6 beaten eggs
      2 cups milk
      1/3 cup sugar
      2-4 tbsp. light rum
      2-4 tbsp. bourbon
      1 cup whipping cream
      1 tsp. vanilla
      2 tbsp. sugar
      Ground Nutmeg
      In a large heavy saucepan, mix eggs, milk, and 1/3 cup sugar. Cook and stir over med. heat till mixture couats a metal spoon. Remove from heat. Cool quickly by placing pan in a sink or bowl of ice water and stirring 1-2 min. Stir in rum, bourban, and vanilla. Chill 4-24 hours.
      At serving time, in a bowl whip cream and 2 tbsp. sugar till soft peaks form. Transfer chilled egg mix to a pinch bowl. Fold in whipped cream mix. Serve at once. Sprinkle each serving with nutmeg. Makes 10 servings.
      Chocolate Eggnog:
      Prepare as above, except stir 1/4 -1/3 cup chocolate flavored syrup into egg mix before chilling.
      Nonalcoholic Eggnog:
      Prepare as above, except omit rum and bourbon. Increase milk to 2 1/4-2 1/2 cups.

                                                                    

      Dessert Coffee

      Ingredients:
      2/3 cup hot strong coffee
      Whipped Cream
      Ground cinnamon or nutmeg
      Stir together hot coffee and desired flavoring. Top with a dallop of whipped cream and sprinkle with cinnamon or nurmeg. Makes 1 serving.
      Chocolate Oragne Dessert Coffee:
      Stir 1 tbsp. chocolate flavored syrup and 1 tbsp. orange liqueur unto hot coffee.
      Mocha Dessert Coffee:
      Stir 1 tbsp. chocolate flavored syrup and 1 tbsp. coffee liqueur into hot coffee.
      Irish Dessert Coffee:
      Stir 1 tbsp. Irish whiskey and 1 tsp. brown sugar into coffee.
      Amaretto Dessert Coffee:
      Stir in 1 tbsp. amaretto or hazelnut liqueur into hot coffee.
      Chocolate Mint Dessert Coffee:
      Stir 1 tbsp. chocolate-mint liqueur into hot coffee.
       

                                                                    

      Cocoa Mix

      Ingredients:
      1 8 qt. pkg. nonfat dry milk
      1 16 oz. pkg. sifted powdered sugar
      1 3/4 cups unsweetened cocoa powder
      1 6oz. jar powdered non-dairy creamer
      Whipped cream or marshmallows
      In a large mixing bowl combine nonfat dry milk powder, powdered sugar, unsweetened cocoa powder, and non-dairy creamer. Stir till thoroughly combined. Store cocoa mix in airtight container. Makes 45 servings.
      For 1 serving, place 1/3 cup cocoa mix in a coffee cup or mug; add 3/4 cup boiling water. Stir to dissolve. Top with a dallop of whipped cream, or a few marshmallows.
      Malted Cocoa Mix:
      Prepare s above, except stir 1 1/2 cups instant malted milk powder into dry ingredients. Makes 48 servings.
      Mocha Mix:
      Prepare as above, except stir in 1/2 cup instant coffee crystals into dry ingredients.

      Spiced Cider

      Ingredients:
      8 cups apple cider or juice
      1/4-1/2 cups packed brown sugar
      6 iches stick cinnamon
      1 tsp. whole allspaice
      1 tsp. whole cloves
      8 thin orange wedges
      8 whole cloves
         (optional)
       
      In a large saucepan combine apple cider or juice and brown sugar. For spice bag, place cinnamon, allspice, and the 1 tsp. whole cloves in a double thickness of cheesecloth. Bring up corners of cheesecloth and tie with strings. Add spicebag to cider mix.
      Bring to boiling, reduce heat. Cover and simmer at least 10 min. Meanwhile, stud orange wedges with cloves. Remove and discard spicebag. Serve cider in mugs with studded oranges. Makes 8 servings

                                                                    

      Hot Buttered Rum

      Ingredients:
      3/4 cup packed brown sugar
      1/2 cup butter, softened
      1/4 tsp. finely shredded lemon peel
      1/4 tsp. groud cinnamon
      1/4 tsp. ground allspice
      Rum
      Boiling Water
      In a small mixing bowl combine brown sugar, butter, lemon peel, cinnamon, and allspice. Beat till well combined. Use immediately, or cover and chill up to 1 month. makes enough for 10 servings.
      For 1 serving, place 1 rounded tbsp. of butter mix in mug. Add 3 tbsp. rum and 1/2 cup boiling water.
