Toasted Chili Nuts
Ingredients: 2 tbs. butter 2 tbs. Worcestershire Sauce 1 tsp. Chili Powder 1/4 tsp. onion salt 1/4 tsp. ground red pepper 2 cups walnut or pecan halves |
In a saucepan, combine butter, worcestershire sauce, chili powder, onion salt, and red pepper. Heat and stir till butter melts. Spread nuts in a 9x9x2 inch pan. Toss with butter mixture. Bake in 350 oven for 12-15 min., or till toasted. Stirring occasionally. Spread on foil, cool. Store in airtight container. Makes 2 cups. |
Nachos
Ingredients: 1/2 bulk pork sausage or Ground beef 1/2 cup chopped onion 2 minced garlic cloves 1 16oz. can refried beans 6 cups tortilla chips 1/2 cup ripe pitted olives 1 4oz. can green chili peppers (diced & drained) 1 1/2 cups shredded cheddar cheese |
Cook meat, onion, & garlic till meat is brown. Drain. Stir in beans. Arrange Half of the chips on each of 2 12in. ovenproof platters. Bake in 350 oven for 5-7 min., or till cheese melts. Serve with avacado dip, sour cream, and salsa. Makes 8 servings. |
Italian-Style Popcorn
Ingredients: 1/4 cup butter 1/2 tsp. dried italian seasoning 1/4 tsp. garlic powder 10 cups warm popped popcorn 1/3 cup grated parmasean cheese |
In saucepan, melt butter, add italian seasoning and garlic. Toss with popcorn, till coated evenly. Toss with cheese. Makes 10 cups. Cajun Style Popcorn: Prepare as above, except omit italian seasoning, garlic powder, and parmasean cheese. Combine 1 tsp. paprika, 1/2 tsp. garlic salt, and 1/8 tsp. each ground white, red, and black pepper with butter. |
Pepperoni Bites
Ingredients: 1 cup shredded mozzarella cheese 1/2 cup chopped pepperoni 1/2 cup pizza sauce 2 pkgs. (10 each) refrig. biscuits 1 tbsp. milk 1/4 cup grated parmasean cheese |
For filling, is a bowl combine mozzarella cheese, pepperoni, and pizza sauce. Set aside. Seperate buscuits. Flatten buscuits to 3 in. circles. Place about 1 rounded tbsp. of filling in the center of each circle. Bring edges of dough together. Pinch to seal. Place them, seam side down, on greased baking sheets. Brush with milk. Sprinkle with parmasean cheese. Bake in a 350 oven for 12-15 min., or till golden brown. Serve warm, makes 20. |
