You can exclude
Notes (and other data fields) when exporting to GEDCOM but not to FTW files.
In the course of exporting, you will be presented with a menu entitled
"Export to Gedcom", with a button labeled "Fields to Export". Use this
button to select which fields you want to export, such as Notes and Marriage
Notes.
Changes for Version 5
My understanding is that this selection capability on export has incredibly
been withdrawn in version 5. Luckily, the ability to select on import has
been retained. By exporting to Gedcom, then importing to an empty file
and de-selecting Notes (and other data fields) on import, you end up with
the file you want.
