   8                    eggs
          pinch         salt
     1/4  cup           heavy cream
   1      packet        sweetener
                        Filling:   
2      tablespoons   butter
     1/3  cup           peaches (stewed)  -- chopped

Combine all ingredients except butter and peaches in a bowl.  Beat until smooth.  Follow Basic Omelet recipe.  When omelet is ready to turn toward center, spoon peaches onto center for filling.  Serve

Almond-peach Crumble

      3 c  Sliced peaches
      2 c  AM Oat Bran
    1/2 c  AM Oat Flakes
    1/2 c  AM Whole Wheat Pastry Flour
    1/4 c  Slivered almonds
    1/2 c  Honey or maple syrup
    1/2 c  AM Sesame Tahini
      1 ts Almond extract
 
  Place peaches in a square casserole dish.  Combine next four ingredients.
  Mix sweetener, tahini, and almond extract together, then work both
  mixtures together until crumbly.  Spread evenly over peaches, and bake at
  375 F. for 35 minutes or until golden.

OAT-PEACH MUFFINS

      1 c  Quick-cooking oats
      1 c  Nonfat buttermilk
    1/4 c  Brown sugar, packed
    1/4 c  Vegetable oil
      2 tb Light molasses
      1 ts Vanilla
      2 ea Egg whites or 1/4 cup
           --cholesterol-free
           --egg product
  1 1/4 c  All-purpose flour
  1 1/2 ts Ground cinnamon
      1 ts Baking soda
      1 ts Baking powder
    1/2 ts Salt
      1 c  Chopped fresh, frozen
           --(thawed) or canned (well
           --drained) peaches
 
  Heat oven to 400ø. Spray bottoms only of 12 medium muffin cups, 2 1/2
  x 1 1/4 inches, with nonstick cooking spray, or line with paper
  baking cups.
  Mix oats and buttermilk in large bowl.
  Beat in brown sugar, oil, molasses, vanilla and egg whites. Stir in
  remaining ingredients except peaches just until flour is moistened
  (batter will be lumpy). Fold in peaches.
  Divide batter evenly among muffin cups (cups will be full).
  Sprinkle with sugar if desired.
  Bake about 20 minutes or until golden brown. Remove from pan.

Caramel Baked Peaches

Prep: 5 min, Cook: 15 min.

Preheat oven to 450°F. Arrange peaches in a glass baking dish. Sprinkle with sugar. Dot peaches with butter. Bake 15-25 minutes, basting peaches occasionally, until tender. Serve peaches topped with caramel.

Peach Crisp

1 29 oz. can sliced peaches and juice 1 18 1/4 oz. box yellow cake mix 1/2 cup melted butter or margarine 1 cup shredded coconut 1 cup chopped pecans Place ingredients in the order listed in a 9" x 13" ungreased baking dish. Bake 325 degree oven for 55 minutes. Enjoy!


Strawberry Bread

3 cups all-purpose flour 1 tsp. baking soda 1 tsp. salt 1 tbl. cinnamon 2 cups sugar ***************** 4 eggs beaten 2 cups thawed frozen strawberries or fresh 1 1/2 cups cooking oil ****************** 1 1/4 cups chopped pecans (optional) Sift the dry ingredients together. Combine the eggs, strawberries, and oil and add to the dry ingredients. Add pecans. Bake in a 325 degree oven for about 1 hour. Makes 4 small or 2 large loaves. Enjoy!!
