Helena's Chicken Roll

CHEESY Chicken Roll

  • 1 tbsp plain lowfat yogurt
  • 1 tbsp parsley snipped
  • tbsp chives, sniped
  • 1/4 cup plain low fat yogurt
  • 2 /2 cups of mushrooms,sliced
  • 1 tbsp pimento strips
  • 1 lb skinless ,boneless chicken breast
  • tbsp dried breadcrumbs-fine
  • 1/2 cup low fat mozzarella cheeze shredded
  • 1/8 tsp paprika
    FILLING - in small bowl combine cheese, mushrooms, 1/4 c yogurt, chives, parsley, piemento Place chicken breast half (bone side up)
    between 2 pieces clear plastic wrap Working from center to edge - pound lightly w meat mallet to 1/8" thickness -
    Carry on with rest of chicken. Sprinkle lightly with salt & pepper
    Spread some filling on each breast half, fold in sides and roll up.
    Arrange seam side down in 10 x 6 x 2 baking dish Combine bread crumbs & paprika - brush chicken with
    1 tbsp yogurt & sprinkle with crumb mixture Bake 350 - 20/25 min or
    till chicken tender & no longer pink. Calories 204 26% fat

    Now for "behind the scenes" When I made this, I just used an old canning jar as a meat hammer - probably didn;t get the thickness right - then when I went to roll up - there was no way those ends were going to tuck in - so I left them open. Also skipped piemento - no access (tho I did have frech chives & parsley in garden). But I just bashed on - had to feed husband (meat/potatoes/gravey kind of guy), daughter (ms physical fitness/fat gram counter), her boyfriend (hungry jock), son (bottomless pit) and another son (mr picky) They all loved it - please try it and let me know - recipe calls for a roll each - HA Cheers, Helena
