Peanut: A widely cultivated subtropical legume, native to Brazil, with edible oily seeds which are borne in slightly constricted pods and developed below the ground . A spreading annual plant, related to peas and beans. The pods vary, some may grow from one to two inches in length with one, two or three seeds. Peanuts were known in South America over 2,000 years ago. George Washington Carver, found over 300 synthetic products that could be made with peanuts, including milk, butter, cheese, coffee, flour, ink, wood stain and insulating board. There are two types of peanuts that are available, generally known as Virginia and Spanish. The Virgina peanut has larger and longer kernels, a lower oil content and a more pronounced flavor than the Spanish peanut. Our peanut is a lot larger in size, a lot cuter, a lot smarter, and we love her a whole lot more.
1/2 cup granulated sugar / 1/2 cup packed brown sugar / 1/2 cup peanut butter / 1/4 cup shortening1/4 cup butter, softened / 1 egg / 1 1/4 cups all-purpose flour / 3/4 tsp. baking soda / 1/2 tsp. baking powder1/4 tsp, saltMix sugars, peanut butter, shortening, butter & egg. Stir in remaining ingredients. Cover & refrigerate 3 hours. Heat oven to 375 degrees. Shape dough into 1 1/4" balls. Place about 3" apart on ungreased cookie sheet. Flatten in crisscross pattern with fork dipped in flower. Bake until light brown 9 to 10 minutes. Cool 2 minutes, remove from cookie sheet. Makes about 3 dozen cookies. Sit down with a cold glass of milk or your favorite beverage, and enjoy.
