Spicy Saffron Chicken


 

 

3 cooked chicken breasts, deboned and cut up
1 pkg. Mahatma Yellow Saffron Rice

Combined with:
   1 cup mayo
   6 scallions, chopped
   ½ tsp. Cayenne pepper
   1 can cream of chicken soup

On the side, prepare 1 package of Mahatma Yellow Saffron rice according to package directions. Spread cooked rice into a greased 9 X 12 baking dish. Spread chicken mixture over rice. Top with crushed Ritz crackers and dot with butter.

Bake at 350° about 30 minutes.

Serves 6-8.
