Lemon Poppy Seed Bread
Jeanie Dotson's Recipe

 

Moist Lemon cake mix (I used Betty Crocker)
1 small package instant lemon pudding
3/4 cup oil
4 eggs
1 cup water
½ teaspoon almond extract
5 teaspoons poppy seeds

GLAZE:
½ cup powdered sugar
3 tablespoons lemon juice

Preheat oven to 350". Grease and flower 2 loaf pans. Mix cake mix, pudding, oil, eggs, water, and almond extract together in large bowl. Beat 4 minutes. Split batter evenly between the two pans. Bake for 50 minutes.

Mix sugar and lemon juice together. Place in microwave for approximately 1 minute or until the sugar dissolves. Before removing loaves from the pan, prick tops with a fork and drizzle with glaze. I used one recipe for glaze for each loaf. Cool and eat!
