• 3/4 cup Margarine, softened
• 1/2 cup sugar
• 1 egg
• 1 medium grated lemon peel
• 1/2 tsp. lemon extract
• 2 cups enriched corn meal
• 1-1/2 cups all-purpose flour
• 1/2 tsp. salt
• 1/4 cup milk

Set oven to 375º

Beat margarine and sugar until fluffy. Blend in egg and lemon peel and lemon extract

Add combined dry ingredients alternately with milk, mixing well after each addition

Shape dough into 1-inch ball. Place on a ungreased cookies sheet. Using bottom of glass dipped in sugar, press into 1/8 inch circle

Bake 15 minutes or until bottoms are lightly browned. Cool 2 minutes on cookie sheet
