Angel Food Macaroons

I tried this recipe last night, and it makes a tasty, chewy cookie.

In a mixing bowl, combine cake mix, water and extract; beat on low speed for 30 seconds. Scrape sides of bowl; beat on medium speed for 1 minute. Fold in the coconut.

Drop by rounded teaspoonfuls on to a parchment paper-lined baking sheet. Bake at 350 for 10 to 12 minutes or until set.

Remove paper with cookies to a rack to cool


Makes 2-1/2 dozen

*Donna's Notes: I used 3 cups of flaked coconut instead of 2 cups. I got a little over 3 dozen macaroons out of the batch when I baked them (which is unusual as I usually get _less_ cookies not more than what is called for in a recipe!)
