Apricot Coconut Squares


Rinse apricots. In small saucepan, cook apricots in boiling water for 10 minutes. Drain well and chop; set aside.

In medium bowl, mix together butter, sugar and 1 cup flour. Press onto bottom of 9 x 13 inch pan. Bake at 325 degrees F (165 degrees C) for 25 minutes.

In medium bowl, beat eggs and gradually add brown sugar. Stir in 1/3 cup flour, baking powder, salt, vanilla, and lemon juice. Fold in nuts, chopped apricots and cocnut, if desired. Pour over crust and bake at 325 degrees for an additional 20 minutes. Cool. Dust with confectioners' sugar.
