Lemon-Cream Cheese Cookies
4 oz. pkg cream cheese, room temperature
1/3 cup soft butter
1/2 cup sugar
2 Tblsp. grated lemon rind
2 tsp. lemon juice
1 cup sifted all-purpose flour
2 tsp. baking powder
1/4 tsp. salt
3/4 cup crushed corn flakes
Blend cream cheese, butter & sugar, creaming until fluffy. Stir in lemon rind & juice.
Sift flour baking powder & salt together. Add to cream cheese mixture & stir until blended & smooth. Chill about 1 hour.
Heat oven to 350 F
Shape dough into small balls about 1 inch in diameter. Roll each ball in corn flakes. Put on ungreased cookie sheet.
Bake 12 to 15 minutes or until set but not brown.
