Preheat oven to 350º
For crumb mixture, in large bowl, combine all crumb mixture ingredients. Beat at low speed, scraping bowl often until mixture is crumbly, 1 to 2 minutes. Reserve 3/4 c. crumb mixture; press remaining crumb mixture onto bottom of greased 9 inch square baking pan.
For filling, spread peach preserves to within 1/2 inch of edges of crumb mixture; sprinkle reserved crumb mixture and coconut over top. Bake 22 to 27 minutes or until edges are lightly browned.
Cool completely. Cut into bars.
