Florentine's Sand Tarts

This is my own recipe and my family really likes them! I mix the dough and chill it for easier slicing. Slice them paper thin or as thin as you can. I use a non-stick baking sheet and take them out of the oven just when they begin to color on top. I check them after 6 minutes. You may have to bake a minute or two longer if they are sliced a bit thicker. If you wait till the edges are brown, they're overdone. Let them set on the baking sheet for half a minute and remove to a wire rack. Hope you enjoy!

Cream sugar and butter. Add egg yolks

Mix flour, baking soda and cream of tartar and add to mixture. Mix well and form into a log on plastic wrap. Wrap and chill

Slice paper thin and put on baking sheet. Sprinkle with sprinkles or cinnamon sugar. Bake at 375º for 6 to 8 minutes. Remove just when tops begin to turn light golden. Remove after half a minute and cool on wire racks.
