Orange Juice Cookies

Only use the best orange juice you can find. It will bring out the flavor better...Enjoy...

Blend the first 6 ingredients in a blender and pour into a bowl. Add the flour and baking powder and knead very thoroughly (important). Batter must not be sticky; may require more flour.

After nicely blended, take a large Tbsp. of batter and roll between your hands to form a long pretzel like stick (You may make cookies in this shape)or bring 2 ends together to form a small doughnut, or press into flat cookie shapes)

Set oven at 350º. Place cookies on large, ungreased cookie sheets. Let stand 10 minutes at room temp, to rest the cookies before baking

Bake 15 minutes until lightly golden brown. I use a icing for these cookies as follows"

Orange juice icing:

  • 1/2 sifted powdered sugar
  • 1/2 cup orange juice
  • 1/2 tsp orange liqeuer
  • 1/2 tsp pure vanilla extract
  • pinch of salt

    Put all ingredients in a mixing bowl until you get the consistency of a heavy syrup, you may need more orange juice. When cookies are done, dip each cookie into the icing mixture, which will form a glaze over the cookies

    Place on a dish. Sprinkle with candy confetti. Let cool until icing dries.
