Jam Cream Cookies

These sandwich cookies are pretty and elegant, with a bit of red jam showing through the top

Sift together flour and salt. Cut in butter with a pastry blender or fork until mixture resembles fine crumbs. Blend in cream with a fork; mix well. Chill dough at least one hour.

Preheat oven to 350 degrees. Roll out dough 1/8-inch thick on a sugared board. Cut half of dough into 2-inch rounds. Cut the other half with a 2-inch doughnut cutter; or cut into 2-inch rounds and then cut a 1/2-inch hole in the center of each. Bake 8 minutes. Cool.

Sandwich each plain round with a round that has a hole in it, using a thin layer of jam.


Makes about 5 dozen.
