Combine rolled oats with melted butter and sugar; stir well to combine. Let stand overnight at room temperature so that the oats will absorb the butter.
The next day add salt, molasses, flour, egg and vanilla extract. Mix well. Drop by teaspoons 2 inches apart on well-greased cookie sheet.
Bake 1 sheet at a time in a preheated 375 degree oven for 6 to 7 minutes or until golden brown. Let stand 30 seconds.
Remove quickly with a spatula to wire racks to cool (or roll each quickly around handle of a wooden spoon.) Makes about 5 dozen. Store in airtight container in cool place.
