Orange and Almond Biscotti


  1. Preheat oven to 350ºF (175ºC). Combine the flour, sugar, baking powder, baking soda, and salt in the bowl of a food processor. Pulse briefly to blend. Add the whole egg and egg white and pulse until incorporated.
  2. Add the orange zest and almonds and pulse until the mixture forms a ball.
  3. Transfer the dough to a greased cookie sheet and form into a 12 x 3-inch loaf. Bake for 25 minutes. Transfer the loaf to a cooling rack.
  4. When cool, slice the loaf into 12 1-inch thick cookies. Return the cookies to the cookie sheet and bake for an additional 20 minutes. Transfer the cookies to the cooling rack and allow to cool.
