Soft cookies made with zucchini and raisins or chocolate and nuts.
2 cups grated zucchini
2 teaspoons baking soda
2 cups white sugar
1 cup butter or margarine, softened
2 eggs
4 cups sifted all-purpose flour
2 teaspoons cinnamon
1 teaspoon cloves
1 teaspoon salt
2 cups walnuts or pecans
2 cups raisins or chocolate chips
In a large bowl combine zucchini, baking soda, sugar and margarine.
Mix well and add eggs. Stir in flour, cinnamon, cloves, salt, nuts, and raisins or chocolate chips. Chill two hours.
Drop by teaspoons at least one inch apart onto cookie sheets.
Bake at 375 degrees for 12-15 minutes.
Makes 6 dozen
These are soft cookies, so let them cool on the cookie sheet for a couple of minutes before removing to cooling racks.
