Cinnamon Sugar Butter Cookies


In a small bowl combine sugar and cinnamon for topping. Set aside

In a large bowl combine flour, soda and salt. Mix well and set aside.

In a large bowl blend sugars with an electric mixer set on medium speed. Add the butter and mix to form a grainy paste. Scrape sides of bowl, then add eggs and vanilla. Mix at medium speed until light and fluffy, approximately 4 minutes.

Add flour mixture and blend at low speed just until combined. DO NOT OVERMIX.

Shape dough into 1-inch balls and roll in topping mix. Place onto ungreased cookie sheets, 2-inches apart. Bake for 18 to 20 minutes.

Immediately transfer cookies to a cool flat surface.

Note: Notes:
1)More flour may have to be added as a fairly stiff dough is needed for these cookies.
2) I added more cinnamon (2 tsp.) to the dough than the original recipe called for, simply because we like cinnamon and the results were fantastic.
3) This recipe may be doubled or tripled. One batch just disappears too quickly.
4) When the cookies come out of the oven, I immediately transfer them to newspaper lined cookie sheets or cooling racks. This helps absorb some of greasiness that are associated with these cookies. But they are sure MMMMMM-Goood
