I got this recipe from my aunt who was a wonderful cook. These won't last long at your house. :-)
- 1 cup butter
- 1 cup vegetable oil
- 1 cup light brown sugar
- 1 cup white sugar
- 1 egg
- 1 cup regular oats (not cooked)
- 1 cup corn flakes, crushed
- 3-1/2 cups all-purpose flour
- 2 tsp. vanilla extract
- 1 tsp. salt
- 1 tsp. baking soda
- 1/2 cup coconut
- 1 cup pecans, chopped
Preheat oven to 325 degrees.
Cream butter, oil, sugars and egg, mix well.
Add remaining ingredients one at a time except pecans. Stir in pecans last.
Form dough into balls the size of walnuts, place on an
ungreased cookie sheet and flatten with a fork.
Bake at 325 degrees for 10-12 minutes or until lightly brown, do not over cook.
Yield: 6 dozen cookies
