Mint Meringue Cookies

These cookies are great, but can be tricky. Two factors with these cookies. You must keep them overnight in the oven. Also these cookies don't spread while baking, so you don't have to spread apart on cookie sheets

Preheat oven to 350º

In bowl, beat together eggs whites and cream of tartar until fluffy. Add sugar and beat until very stiff. Add peppermint extract and food coloring. Fold in chocolate morsels.

Drop by tsp. onto a ungreased baking sheet.

Here's the tricky part: place in preheated oven and turn Off the oven, and leave in oven overnight
