Frosted Shortbread Squares


Butter two 9-inch baking pans.

Cream butter and sugar well. Beat in egg, salt, orange rind and flour.(This will make a very stiff dough). Press into pans. Prick all over with fork. Bake at 325º,for 30 minutes.

Melt chocolate and blend with butter. Brush the mixture over hot dough. Sprinkle chopped orange rind on top, gently pressing it into chocolate.

Cut in squares before chocolate sets
