It takes 2 weeks for them to start giving milk.
Maintenance: 1 unit of fodder (buy for 20G at Barley's, or cut your full-grown grass) per day, or keep them outside. Brush 1x/day. Talk to 1x/day. Milk 1x/day.
Reproduction: use a C.M. Potion (3000G at Yodel Ranch) on an adult cow. It will be pregnant for three weeks, during which time it will not give milk but its happiness will rise quickly. It will then give birth to a calf, which takes 1 month to grow up.
Machine: Cheesemaker, 20000G and adamantine ore at Saibara's, will change milk into cheese.

SHEEP


They give wool immediately

Reproduction: use a S.M. Potion (3000G at Yodel Ranch) on an adult sheep that still has her wool. It will be pregnant for three weeks, during which time it will not give milk but its happiness will rise quickly. It will then give birth to a calf, which takes 2 weeks to grow up.
Machine: Yarn maker, 20000G and adamantine ore at Saibara's, will change wool into yarn.

HORSE


Barley gives you your horse the first time you visit Yodel Ranch (if he's there, of course). He asks you to raise it; say yes. Brush it and talk to it daily, and if it has 8+ hearts by the end of a year, Barley will let you keep it!

Once it is full grown, you can ride on it and throw crops in its saddlebags (which work the same way as your shipping bin). Ride it often to give it exercise, and it just might win the Horse Race.

DOG

Your ranch comes with a dog. Raise its heart level by picking it up every day. It's also happier if you keep it outside, except when the weather's bad. When it grows up, Won will come to sell you a dog ball for 100G. Now you can play fetch! Play with your dog a couple times a day to train it for the Dog Race.

FISH

Once you have the Fishing Rod, you can fish in any body of water. If you throw your fish into the fish pond on the farm and feed them once a day (1 unit of fish food costs 20G at the Supermarket, and will feed all your fish, no matter how many there are), they will reproduce.

The fish pond will be frozen over in winte,r but don't worry, your fish won't die; you just won't be able to take any out or put any in. Instead, you can keep any fish you catch in the fridge until Spring, and they won't die. Yes, Harvest Moon cryogenics.
