Name of dessert: Getuk Ubi Ingredients: 800g tapioca, peeled and cut into 5cm pieces 180g coarsely grated coconut 180g grated palm sugar or brown sugar pinch of salt finely grated coconut to garnish Methods: 1) Put tapioca pieces into a pot of water and boil for 20 minutes till cooked. Drain and mash while still hot. 2) To the mashed tapioca, add the coarsely grated coconut, palm sugar and salt. Mix well and press the tapioca into a rectangular tray.
