My Favorite Apple and Blueberry Recipes I love blueberries and apples in art work as well as food. Here are some recipes I have used that my husband and I enjoy. Hope you will enjoy them too. |
Apple Nut Cake 1 3/4 cups sugar 3 eggs 1 cup salad oil 2 cups diced apple or 3 large apples 1/2 cup chopped nuts 1 tsp salt 2 cups flour 1 tsp cinnamon 1 tsp baking soda Mix all ingredients together in a large bowl. Bake in greased and floured tube pan at 350 degrees for 50 minutes or until cake tests done. Cool. Put on a plate and sprinkle with powdered sugar. |

Apple Sauce Cake 1 yellow cake mix 4 eggs - beaten 15 ozs applesauce Beat with mixer till fluffy. Pour 1/2 batter into greased and floured bundt pan. Sprinkle 1/3 cup sugar, 1 tsp cinnamon and 1/2 cup nuts on cake. Pour rest of batter on top. Bake at 350 degrees for 45 - 50 minutes. Let cool for 10 minutes. Put on plate and sprinkle with powdered sugar. |

Apple Squares 3/4 cup butter or margarine softened 1 pkg white cake mix 1 can apple pie filling 1/2 cup flaked coconut In large bowl, cut butter into dry cake mix. Reserve 1 cup. Press remaining mixture into 13 x 9 inch baking pan. Spoon pie filling evenly over cake mixture. In small bowl, combine reserved cake mixture and coconut. Sprinkle over pie filling. Bake at 350 degrees for 45 minutes or until golden brown. Cool slightly before cutting into squares. |
Apple Cake #1 2 1/4 C. Flour 1 1/3 C. Sugar 1/2 c. Shortening 1 C. Milk 1/2 tsp. Salt 2 1/2 tsp. Baking Powder 1 tsp. Vanilla 2 Eggs Beat shortening until fluffy. Add sugar and eggs, continue beating until blended. Add salt, baking powder and half of the flour. Beat till blended and add half of milk beating until well mixed. Add remaining flour and milk and beat about 2 minutes. Turn into 9" x 13" x 2" cake pan which has been greased and floured. Top with rows of apple slices. Sprinkle with sugar and cinnamon and dot with butter. Bake in 375 degree oven approximately 40 - 45 minutes. Cake is done when toothpick comes out clean. |

Add sugar and eggs, continue beating until blended. Add salt, baking powder and half the flour; beat until blended, and add half of the milk beating until well mixed. Add remaining flour and milk and beat about 2 minutes. Turn into 9" x 13" x2" cake pan which has been greased and floured. Top with rows of apple quarters. Sprinkle with sugar and cinnamon and dot with butter. Bake in 375 degree oven approximately 40 - 45 minutes. Cake is done when toothpick comes out clean. |

Blueberry Coffee Cake 3/4 cup sugar 1/2 cup butter or margarine 1 cup flour 1 tsp baking powder Pinch of salt 2 eggs 2 cups blueberries or 24 halves of purple plums (12 pitted Plums) Cream sugar and butter. Add everything but blueberries or plums. Beat with electric mixer until fluffy. Pour batter (batter is thick) into a greased and floured 9" square cake pan. Push fruit into batter. I sprinkle some sugar and cinnamon on top. Bake at 350 degrees for about 1 hour. Cool. |

Fresh Berry Crumb Pie Crumb Crust/Topping: 1 cup finely-chopped walnuts 2 cups all-purpose flour 1/2 cup granulated sugar 3/4 cup (1 1/2 sticks) chilled butter, cut into small pieces. Filling: 1/2 cup granulated sugar 1 1/2 tablespoons cornstarch 2 pints fresh berries such as blueberries, raspberries, and/or strawberries) Preheat the oven to 350 degrees. In large bowl, mix together the nuts, flour, and sugar. Using a pastry blender or 2 knives, cut the butter into the flour mixture until coarse crumbs form. Using fingers, evenly press half of the crumb crust/topping mixture into the bottom and sides of an 8 or 9 inch tart pan. To prepare the filling, in a medium bowl, mix together the sugar and the cornstarch. Gently fold in the berries. Spoon the berry mixture into the crust, spreading evenly. Sprinkle the berry mixture evenly with the remaining crumb crust/topping. Bake until topping is golden and filling is bubbly, 30 minutes. Transfer the pan to a wire rack to cool for 10 minutes. Serve warm. |

Fruit-Filled Coffee Cake Sift: 3 cups flour 4 tsp baking powder 1 tsp salt 1/2 cup sugar Cut in: 1/2 cup shortening Add: 3/4 cup milk 1 slightly beaten egg Stir with fork till ball is formed. Knead for 1 minute. (I knead it right in the bowl) Roll out on greased cookie sheet to corners. Put pie filling in center. Cut sides into strips from filling out to edge and fold over pie filling in center. Bake in 350 degree oven for 40 to 50 minutes. After it is cooled, glaze with confectioners sugar and milk or water. |

Fruit Cocktail Cake (This recipe is a throwback to the 60's. I am reviving it in my circle of friends.) 1 15oz. can of fruit cocktail with juice 2 eggs 1/3 cup water 2 cups flour 1 l/2 cups sugar 2 tsps. baking soda 1/2 tsp. salt Mix all ingredients together. Pour into an ungreased 9 x 13 inch pan. Sprinkle 1/2 cup chopped nuts and 1/2 cup brown sugar evenly over the top of the batter. Bake at 325 degree preheated oven for 40 - 50 minutes. Let cool. Serve plain or with Cool Whip or whipped cream. For a really rich dessert bring 1/2 cup margarine, 2/3 cup evaporated milk and 3/4 cup sugar to a boil. Pour over cooled cake. Serve with whipped cream. (I don't usually do this, but it is delicious!) |

Fruit Cocktail Cake - Easy Version 1 pkg. of yellow cake mix 3eggs 1 can of fruit cocktail 1/4 C. Water Blend until smooth. Pour into a greased and sugar-coated 9" x 13" pan. Sprinkle generously with cinnamon and sugar. (1 tsp. cinnamon to 1/3 C sugar) Sprinkle chopped nuts on top if desired. Bake at 350 degrees for 45-50 minutes. |
