Curry Sauce |
3 tablespoons vegetable oil 1 onion peeled and minced 1 apple, peeled, cored, chopped fine 1/2 cup all purpose flour |
Heal oil in saucepan and add onion and apple. Saute until they are light brown. Sprinkle the flour over the apple and onion, mix in well. Cook 4-5 minutes, remove from heat and cool. Add the curry powder to the cooled roux and immediately add the heated stock, pouring it in slowly, stirring constantly. Season with salt and pepper and simmer for 30 minutes. Strain the sauce in clean saucepan and discard the onion and apple. Add cream, heat, do not boil. |
