Breaded Mushrooms |
2 pounds mushrooms (flour for dredging) 2 eggs. beaten with a pinch of salt Bread crumbs for coating 3 cups vegetable oil |
Slice mushrooms thickly. Put the flour on a piece of wax paper. Beat the eggs with the salt. Put bread crumbs on a piece of wax paper. Heat oil. When oil is hot, dip the mushroom pieces first into the flour , then the egg, and finally into the bread crumbs. Use the palm of your hand to press the bread crumbs into the mushroom slices. Drop the slices into the hot oil and fry until brown on both sides. Drain on paper towel and serve hot. Makes 6 Servings |
