RHUBARB CAKE


Preheat oven to 350*
1/2 cup shortening
2 eggs
1 cup sugar
2 cup flour
1 teaspoon salt
2 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup milk
1 teaspoon vanilla

Cream shortening and eggs together. Add the sugar and mix well. sift flour, salt soda and baking powder together in seperate bowl. Add flour mixture alternately with milk to the egg mixture. Beat well and then add the vanilla. Pour into a greased cake pan. Sprinkle with mixture of 4 cups cut up rhubarb mixed with 1 1/2 cup sugar. Bake for 45 minutes to 1 hour. Serve with whipped cream.
