Zucchini Bread

3/4 teaspoon baking powder
1 1/2 teaspoon salt
2 cups sugar
1 teaspoon vanilla
2 cups grated zucchini
(drain the zucchini but don't pack it.)

3 1/2 cups Sifted Four
1 1/2 teaspoon baking soda
1 teaspoon cinnamon
1 cup oil
4 large eggs
1 cup chopped nuts
1 cup pineapple

Sift flour, soda bakin powder, salt and cinnamon together in a bowl or on wax papper then set aside. In a large mixing bowl mix oil, sugar and vanilla together. Then add eggs one at a time mixing well after each egg is added. Stir in flour mixture alternatly with zucchini, then stir in nuts and crushed pineapple. Pour into 2 or 3 loaf pans (depending on size of pans) filling each 1/2 full. Bake in a 350 degree oven for 55 to 60 minutes. Loosen edges and turn out onto a wire cooling rack right side up. Cool completely before slicing.
