Delicious Samhain Pumpkin Loaf

Ingredients:
1/4 tsp. ground cloves
1 1/2 tsp. ground ginger
2 1/2 cups pureed pumpkin (about one big can of pumpkin pie filling works great!)
1/2 cup whipping cream
1 cup applesauce
1/2 cup butter or margarine (1 stick of butter)
2 tablespoons molasses
1 3/4 cups packed brown sugar
4 eggs
3 tsp. vanilla extract (or the real thing if you've got it)
1 tsp. grated lemon rind
4 cups flour
1 tsp. salt
1/2 tsp baking soda
1 tablespoon baking powder
1 tsp. allspice
2 tsp. cinnamon
1/4 cup lemon juice

Preheat oven to 350 degrees farenheit. Grease two loaf pans, or 1 casserole dish if you don't have that. (13x9) Beat butter, applesauce and sugar in a large bowl. Add egs, one at a time, beating each one well. When fluffy, stir in vanilla, lemon rind and lemon juice. Sift together all dry ingredients. Add this mixture to the butter mixture, alternating between pumpkin sauce and dry mixture. Mix just enough to combine, do not overmix, and finish with dry mix. Spread into pans and bake for 40 to 50 min. for loaf pans, 35 min. for casserole dish, or until a toothpick inserted in the middle comes out dry. For loaf pans, cool 10 min in the pan, strike pan sharply, and dislodge the bread from pan. Cool a while before eating, but serve slightly warm.
RATING: 10!
